I found this recipe at recipe for living. I messed with their recipe by adding an apple, and splenda brown sugar blend. So either use splenda or a equal mix of regular splenda and regular brown sugar bringing the total to 1 1/4 cups sugar.

Recipe Ingredients for Zucchini Apple Pie

1 large apple
1 pie crust - store bought -2 9inch crusts
4 cups chopped zucchini
2 tablespoons lemon juice
3/4 cup brown sugar
1 1/2 teaspoons ground cinnamon
1 1/2 teaspoons cream of tartar
1 pinch ground nutmeg
3 tablespoons white flour

Recipe Directions for Zucchini Apple Pie

  1. Peel the zucchini and cut in half lengthwise. Remove seeds and slice so that it looks like the apple slices in apple pie. Get a large Pam'd out fry pan and toss in zucchini and apple that has been peeled and sliced for pie. Cook until tender crisp, along with lemon juice.

  2. Add sugar, cinnamon, cream of tartar, nutmeg and flour to zucchini apple mixture. Mix will be runny. I let my apple zucchini mixture cool down some before adding the other stuff.

  3. Place filling into a 9" pie crust. Put on the top crust, flute, and vent.

  4. Bake in a preheated 400 degree oven for 40 minutes.

  5. Put strips of aluminum foil on edges for the last 15 minutes.
