Vegan zucchini apple banana muffins

Recipe Ingredients for Zucchini apple banana muffins

2 medium zucchini
2 medium apples
3 medium bananas
3 tbs flax seed
1/2 cup soy milk
1 tbs apple cider vinegar
2/3 cup canola oil
3/4 cup sugar
2 tsp molasses
1 tsp vanilla
2 1/2 cup whole wheat flour
1 cup white flour
1 1/2 tsp baking soda
1 1/2 tsp salt
1 tbs cinnamon

Recipe Directions for Zucchini apple banana muffins

  1. Grate zucchini and apples, mash banana. Mix together. Add next 7 ingredients (through vanilla) and mix thoroughly.

  2. Combine flours, baking soda, salt, and cinnamon.

  3. Add wet ingredients to dry and stir until moistened.

  4. Optional: Stir in 1 cup of chopped walnuts or pecans.

  5. Bake muffins at 375 for 20 to 25 minutes until browned and a toothpick inserted comes out clean.
