Recipe Ingredients for ZONE Chicken Fricassee with Veggies

8 oz Oikos Organic Greek Yogurt
6 oz Chicken
1 cup, chopped Onions
2 cup, pieces or slices Mushrooms
1 tbsp Corn Starch
1.5 cup, chopped Broccoli
1 medium Squash, Summer, Zucchini, Includes Skin
1/4 cup Almonds
1.5 cup Natural Goodness Chicken Broth
0.13 Teaspoon Juice
1 dash Salt, Table
1 cup Spinach
2 clove Garlic

Recipe Directions for ZONE Chicken Fricassee with Veggies

  1. In saucepan, cook onions, quartered mushrooms, and chicken in chicken stock until veggies are tender and chicken is done. Remove from heat and slowly stir lemon juice and yogurt, then add cornstarch (mixed with a little water). Lightly simmer chicken mix 4-5 min until mixture thickens. Add sliced zucchini and cook until soft.

  2. Spray a separate nonstick pan with oil, add chopped garlic, then add spinach and cover until cooked.

  3. Cook broccoli by steaming in microwave.

  4. Place Chicken Fricassee mix on 2 serving plates along with an equal amount of cooked broccoli topped with chopped almonds.
