Makes 30 servings



Serving Size is for ***1/2 SERVING***, so enter it twice if you are having 1/15th of the casserole dish. I use The Laughing Cow Herb and Garlic cream cheese - 4 wedges. Also, I use 6 links of the ground turkey sausage which are seasoned with Italian seasonings. You could easily use the carrot/peas mixture instead of just peas. I always choose low sodium or no salt ingredients when they are available, so the sodium is probably lower than on the nutrition list.

Recipe Ingredients for Ziti Casserole


Sauce Mixture:
1 lb. turkey sausage
2 cups peas
1 cup onion
1 T garlic
3/4 cup red wine
28 oz diced tomatoes
14 oz stewed tomatoes
7 oz tomato sauce
1/4 cup basil
1/3 cup black olives
1/2 cup mushrooms
2 T red pepper flakes
1 teaspoon salt, coarse
2 t pepper, freshly ground

Noodle Mixture:
8 oz ziti
1 cup light sour cream
4 T light cream cheese
1/4 cup parsley flakes
2 cup mozzarella, part skim

Topping:
1/2 cup parmesan
1/2 cup mozzarella, part skim

Recipe Directions for Ziti Casserole

  1. Sauce:

  2. Brown the sausage in olive oil (about 1 T)

  3. Add diced onion, and cook for 5 minutes

  4. Add diced garlic, and cook for 1 minute

  5. Add wine and allow to simmer for 3 minutes

  6. Add tomatoes, peas, basil, red pepper flakes (optional or use less), mushrooms and black olives. Allow to simmer 30-60 minutes, stirring as needed.

  7. Noodle Mixture:

  8. Cook the noodles in boiling water for 8 minutes; strain but do not rinse.

  9. Put them back into the kettle, but not on heat.

  10. Mix in the cream cheese until it melts and stirs easily.

  11. Add the parsley and sour cream (or ricotta cheese)

  12. Stir in the 2 cups mozzarella cheese.

  13. Layer the noodle mixture and sauce mixture in a lasagne casserole dish - sauce, noodles, sauce, noodles, sauce

  14. Cover with foil and bake at 400 for 30 minutes.

  15. Top with 1/2 cup of mozzarella and 1/2 cup of parmesan cheese.

  16. Bake, covered, at 400 degrees for 5 minutes.

  17. Broil, uncovered, at 500 degrees for 5 minutes if the cheese is not melted enough.

  18. Serve by cutting lengthwise 3 times; and across 5 times.

  19. These are deep servings, so it might not stay layered and you don't need a large square of it.
