I found this recipe in the 365 Ways to Wok cookbook several years ago. My family has enjoyed it ever since.

Recipe Ingredients for Ziti with Asparagus and Mushrooms

1 lb. ziti
3 tablespoons olive oil
2 garlic cloves, minced
3/4 lb. mushrooms, sliced
2 tsp. lemon juice
3/4 lb. fresh asparagus, cut diagonally into 1 inch pieces
1/2 tsp. dried tarragon
1/2 tsp. salt
1/4 tsp. black pepper
1/8 tsp. cayenne
1/2 cup grated Parmesan

Recipe Directions for Ziti with Asparagus and Mushrooms

  1. In a large pot of water (salted and boiling), cook ziti until tender, but still firm, 10 to 12 minutes. Measure out 1/2 cup cooking liquid and set aside. Drain pasta into a colander.

  2. Meanwhile, in a wok, heat olive oil over high heat until hot, swirling to coat sides of pan. Add garlic and mushrooms and stir-fry until mushrooms exude most of their juices, 3 to 5 minutes. Toss with lemon juice. Add asparagus, tarragon, salt, pepper and cayenne. Stir-fry until asparagus is crisp-tender, 2-3 minutes.

  3. Add reserved cooking liquid to vegetables in wok. Add ziti and half of Parmesan and cook, tossing, about 30 seconds, until cheese is melted and pasta is heated through. Turn into serving bowl and sprinkle with remaining Parmesan on top. Serve at once.
