Rice with a bit of flare! Leave the seeds in the jalapeno or add an extra one if you like it hot. I love this rice!

Recipe Ingredients for Zippy Rice Pilaf

1 cup brown rice
1/2 cups chicken broth
2 1/2 cups water
1 onion, chopped
3 garlic cloves, minced
1 tsp cumin
1/4 cup coriander, chopped
1 tbsp extra virgin olive oil
1 jalapeno pepper

Recipe Directions for Zippy Rice Pilaf

  1. Heat oil in medium size pot. Add onion and garlic and sautee until soft. Add rice, cumin, and jalapeno and stir to coat. Then add broth and water (or you can use 3 cups of fat free chicken broth rather than water).

  2. Bring to a boil and then reduce to simmer. Simmer until liquid is gone or follow cooking instructions on the rice that you are using.

  3. Add fresh coriander, stir and serve.
