Recipe Ingredients for Zippy Potato Salad

3 lbs potatoes, cut into 3/4 inch cubes
6 hard boiled eggs, quartered and sliced
1 small onion, chopped
4 green onions, chopped
3/4 cup miracle whip
1 tbsp prepared mustard
4 cloves garlic, minced
10 medium radishes, sliced
1 stalk celery, diced

Recipe Directions for Zippy Potato Salad

  1. Boil potatoes in unsalted water until just fork tender; drain and plunge into cold water to stop cooking.

  2. Rinse potatoes well in cold water to remove starch.

  3. In a large mixing bowl combine all ingredients except for a small handful of radish slices and mix well.

  4. Transfer salad to a suitably sized serving bowl and garnish with reserved radish slices.

  5. Cover with stretch wrap and refrigerate for at least 5 hours to allow flavors to blend.
