Recipe Ingredients for Zingy Italian White Bean Soup

29 oz Cannellini (White Kidney) Beans, Organic
2 tsp Gourmet Natural Seasoning
6 tsp Garlic, minced
1 large Organic Yellow Onion, diced
4 medium stalks Organic Celery
1 bulb Fennel, Bulb, diced
2 large Squash, Summer, Zucchini, Includes Skin, diced
908 grams Southern Blend Greens (Collard, Mustard , chopped
6 tbsp lemon juice
2 tsp Oregano, Ground
1 tbsp Sage, Ground
2 teaspoon Parsley
1 tsp Sea Salt
2 tsp Spices Ground Black Pepper
4 tsp Sauce, Ready-to-serve, Pepper, Tabasco
11 cups Natural Foods - Organic Vegetable Broth

Recipe Directions for Zingy Italian White Bean Soup

  1. In a large soup pot, dissolve the bouillon cube in cup water over medium heat.

  2. Add garlic and onion and cook, stirring constantly, until they sweat

  3. Add celery and fennel with a pinch of sea salt. Allow vegetables to heat through and soften.

  4. Cover the vegetables with vegetable broth (or water) and bring to a boil.

  5. Simmer for 5 -10 minutes.

  6. Add remaining vegetable broth and 3 cups of water.

  7. Add southern greens (or spinach) and mix in thoroughly.

  8. Add zucchini, beans, oregano, sage, parsley, tamari, sea salt, and black pepper.

  9. Simmer for another 5 minutes, or until the zucchini is cooked but not mushy.

  10. Turn off the heat.

  11. Squeeze the juice of the lemons into the soup.

  12. Add tabasco sauce and splash of Liquid Aminos (or Tamari).

  13. Adjust seasonings, as needed, and then serve.
