Thinly sliced zucchini with a zesty pasta sauce, served with shrimp

Recipe Ingredients for Zesty Zucchini "spaghetti" with Shrimp

1 zucchini
4 cloves garlic
1 small onion
3 slices roasted red pepper
3 tomatoes
3 leaves basil
3 leaves sage
1 spring rosemary
2 sprigs thyme
1 spring parsley
12 shrimp
1 T olive oil
6 t Parmesan cheese
1 salt
1 pepper

Recipe Directions for Zesty Zucchini "spaghetti" with Shrimp

  1. Cut zucchini into long, thin strips with mandolin slicer or knife.

  2. Roughly chop garlic, onion and red pepper.

  3. Chop tomatoes into bite-sized pieces. Chop the herbs and add to tomatoes.

  4. Add olive oil to pan; heat on medium, then add garlic mixture. Saute over medium. The mixture will be slightly watery; cook until mostly evaporated.

  5. Add the tomato mixture and continue to cook until mixture starts to thicken and is no longer runny.

  6. Add the zucchini and cook until al dente.

  7. Add the shrimp and cook until pink.

  8. Turn off the heat and transfer to plates. Top with cheese and salt and pepper, if needed.

  9. Enjoy!
