Recipe Ingredients for Zesty Winter Squash Soup

2 tbsp butter
1 cup chopped onion
1 garlic clove, crushed
1 tsp curry powder
1/4 tsp salt
1/8 tsp ground coriander
1/8 tsp crushed red pepper
3 cups chicken broth
1 3/4 cups winter squash, cooked and mashed
1 cup skim milk

Recipe Directions for Zesty Winter Squash Soup

  1. In large saucepan, melt butter; sauté onion and garlic until soft.

  2. Add curry powder, salt, coriander, and red pepper; cook 1 (one) minute.

  3. Add broth; boil gently, uncovered, for15 or 20 minutes.

  4. Stir in squash and milk; cook five minutes.

  5. Garnish with dollop of sour cream and chopped chives if desired.
