no pumpkin chunks, just pumpkiny broth

Recipe Ingredients for Zesty Thai Pumpkin Curry Soup

6 oz pumpkin puree
2 teaspoons peanut oil
5 oz lite coconut milk
1 teaspoon chopped green chili pepper
1/2 yellow onion
1/2 red bell pepper
1 teaspoon chopped garlic
1 1/2 teaspoon ginger
2 tablespoons lemongrass
12 oz water

Recipe Directions for Zesty Thai Pumpkin Curry Soup

  1. stir fry onions a couple minutes, add bell peppers, then garlic.

  2. add water or veg stock, desired curry spices, ginger, peppers. simmer.

  3. add pumpkin, stir, add coconut milk, stir.

  4. add basil, let simmer for 10 minutes.

  5. serve with sriracha sauce
