Makes 4 servings



A one-dish meal to be served either cold or at room temperature. The Adobo sauce give it a slightly smoky flavor. Each 334 g serving = apprx. 1 1/2 cups. Assemble ahead and refrigerate for up to 1 day. Serve with tortilla chips and garnish with 2 tablespoons of cubed avocado.

Recipe Ingredients for Zesty Shrimp & Black Bean Salad

1/4 cup apple cider vinegar
3 tablespoons extra-virgin olive oil
1 tablespoon minced Chipotle chile (in adobo sauce)
1 tsp. ground cumin
1 lb. cooked shrimp (cut into 1/2" pieces)
15 oz. black beans (drained and rinsed)
1 cup cherry tomatoes (quartered)
1 large bell pepper (chopped)
1/4 cup chopped green onions
1/4 cup chopped fresh cilantro
1/4 tsp. sea salt

Recipe Directions for Zesty Shrimp & Black Bean Salad

  1. Cook the peeled and deveined shrimp and set aside

  2. Whisk the vinegar, oil, chipotle, cumin and salt together in a large bowl.

  3. Add the shrimp, beans, tomatoes, bell pepper, green onions and cilantro

  4. Toss to coat

  5. Refrigerate or serve immediately
