Recipe Ingredients for Zesty Pumpkin Lime Soup

1 1/2 tsp cumin seed
1/4 tsp ground black pepper
1/4 tsp nutmeg
1/8 tsp allspice
1 1/2 tsp olive oil
1 cup chicken broth
3/4 cup water
1 medium chopped onion
1 clove garlic, minced
1 1/2 cups pumpkin
2 tbsp honey
1 tbsp lime juice
1/4 cup plain yogurt

Recipe Directions for Zesty Pumpkin Lime Soup

  1. Mix cumin, pepper, nutmeg & allspice in a bowl.

  2. Heat olive oil in a medium saucepan until almost (but not) smoking, add spices, and cook for about 30 seconds.

  3. Add the broth and water.

  4. Stir in the onions and garlic, cover, and bring to a boil.

  5. Reduce heat and simmer for 5 minutes.

  6. Stir in the pumpkin, and then cover and simmer over low heat for 15 minutes, stirring occasionally.

  7. Remove from heat and stir in lime juice and honey.

  8. Serve with a dollop of yogurt and a lime wedge.
