A delicious zesty treat to spread on your favourite pancake or muffin or to add to your greek yogurt. You can also make a light and fluffy lemon mousse sure to please all.

Recipe Ingredients for Zesty Low Carb Lemon Curd

4 tbsp butter
1/2 cup lemon juice
1 cup sugar
3 eggs
1 egg yolk
1/4 tsp lemon zest

Recipe Directions for Zesty Low Carb Lemon Curd

  1. Cube the butter into small pieces and wrap in plastic wrap and place in freezer.

  2. Add the remaining ingredients to a pot and whisk together. Place over a double boiler that is simmering. Whisk together until the mixture begins to thicken. Do not allow to boil. Once mixture has thickened remove from heat and immediately stir in cold cubed butter from the freezer. Pour into a mason jar and store in fridge for up to one week.
