Recipe Ingredients for Zesty Greek Couscous Salad

4 1/2 cups Couscous, Near East Original Plain
1/4 tsp black pepper
2 tbsp lemon juice
3 tbsp olive oil
1 medium zucchini, halfed and thinly sliced
1/2 cup fresh basil, cut into strips
1/3 cup green onions, sliced
3/4 cup feta cheese, crumbled

Recipe Directions for Zesty Greek Couscous Salad

  1. Prepare Near East couscous according to package directions, except omit butter or olive oil and add black pepper with water.

  2. In large bowl, combine prepared couscous, lemon juice and olive oil. Add tomoatoes, zucchini, basil and green onions. Chill 4 hours or overnight.

  3. Stir in cheese just before serving. Serve over lettuce if desired.
