Real Simple Chicken & Cheese Enchiladas, adapted to include more veggies

Recipe Ingredients for Zesty Chicken Enchiladas

1 tablespoon olive oil
1 pound tomatillos
1/2 onion
4 oz jalepeno peppers
4 oz poblano peppers
1 cup heavy cream
14 1/2 oz tomato
2 cups Monterey Jack cheese
12 corn tortillas
1 potato
1 acorn squash
1 pound chicken

Recipe Directions for Zesty Chicken Enchiladas

  1. Heat oven to 400 F. Dice onion, potato & squash. Toss with cumin, salt, pepper & olive oil & roast for 30 minutes.

  2. Add the tomatillos, jalepenos, green chillis, cumin, and teaspoon salt to a food processor, add the cream, and puree.

  3. In a large bowl, combine the chicken, tomatoes, 1 cup of the cheese, cup of the tomatillo sauce, roasted veggies, and teaspoon each salt and pepper.

  4. Warm the tortillas according to the package directions.

  5. Spread 1 cup of the remaining sauce in a 9-by-13-inch baking dish. Roll the chicken mixture in the tortillas and place them in the dish, seam-side down.

  6. Top with the remaining sauce and cheese. Bake until beginning to brown, 10 to 15 minutes.

  7. Serve with Pico de Gallo.
