Recipe Ingredients for Zesty Black Beans

3 1/2 cup Black Beans
3/4 cup Mild Diced Tomatoes and Green Chilies
1 pepper Peppers, Jalapeno
3 tbsp chopped Shallots
14 1/10 g Recaito
1 tbsp Olive Oil

Recipe Directions for Zesty Black Beans

  1. Heat the olive oil in a medium sauce pan, over medium heat.

  2. Finely chop the jalepeno and shallot.

  3. Add the jalepeno and shallot to the pan, and saute until the shallot is translucent.

  4. Add the recaito and Rotel to the pan, and stir until hot.

  5. Add two cans of black beans, undrained. Stir.

  6. Season to taste with salt and pepper if desired.

  7. Simmer over low heat until the beans are tender and the liquid has thickened.

  8. Serve hot.
