Recipe Ingredients for Zazu's Pot Roast

1 1/2 kg beef, eye of round
1592 ml canned tomatoes
540 ml black beans
540 ml kidney beans

Recipe Directions for Zazu's Pot Roast

  1. Preheat oven to 350F.

  2. In a roasting pan, place 2 cans (28 oz size) of tomatoes (including liquids)along the bottom. Place roast on top of tomatoes. Place seasonings on roast and rub all over. I chose chili powder, black pepper and cajun seasoning. Cover the roast pan and place in oven for 2 hours at 350F. Remove pan and add both types of beans. Stir in with the tomatoes. Place in oven for another hour or until fully cooked. Enjoy!
