Recipe Ingredients for Zapekanka

450 g part skim ricotta
5 tbsp sugar
2 eggs
170 g yogurt
240 g cream of wheat

Recipe Directions for Zapekanka

  1. Beat together eggs and sugar.

  2. Add vanilla to the mixture.

  3. Mix in ricotta and yogurt and beat well.

  4. Mix in 50 ml of dry cream of wheat (equals one packet of instant cream of wheat).

  5. If desired, add frozen or fresh berries.

  6. Bake at 350F for 40-50 minutes until golden brown on top.
