Recipe Ingredients for Zanya Foco's Breakfast Casserole

12 oz. shredded potatoes
1/2 cup sharp cheddar cheese
2 oz. lean ham
2 whole eggs
4 egg whites
2 tablespoons skim milk
2 tablespoons dijon mustard
1/4 teaspoon thyme
1/4 teaspoon black pepper

Recipe Directions for Zanya Foco's Breakfast Casserole

Place frozen potatoes in the bottom of a 8"x8" baking dish, coated with non-stick spray. Break up large chunks. Cut the meat into small chunks. Sprinkle the meat and cheese over the potatoes. In a small bowl, whip lightly with a fork. Pour evenly over the potato mixture. Top the casserole with pepper. Place in the oven at 375,uncovered and set timer for 40 minutes.
