It's Pad Thai and it's vegetarian!

Recipe Ingredients for Zajacland Vegetarian Pad Thai

1/4 c vegetarian oyster sauce
1/8 c White vinegar
1/8 c Rice vinegar
4 tbsp Sugar
1 tsp Paprika
227 g rice noodles
350 g extra firm tofu
3 tbsp olive Oil
2 Garlic cloves
1/4 c chopped peanuts
1/2 tsp hot chili sauce
2 eggs
1 cup broccoli florets
1 medium carrot

Recipe Directions for Zajacland Vegetarian Pad Thai

  1. Combine fish sauce, vinegar, sugar, chilli sauce (if using) and paprika and set aside.

  2. Cook noodles to package directions (I boil for about 3 minutes) then rinse with cold water and set aside.

  3. In wok or large frying pan, scramble eggs. Set aside. In same pan, put fry garlic and tofu cubes in oil over medium heat until the tofu is lightly browned. I often add a sprinkle of soy sauce here too.

  4. If you want to add other veggies or chicken or whatever, do so once the tofu is mostly cooked. Once veggies are cooked, add noodles and scrambled eggs and pour sauce over everything. Mix well (I toss it like a salad). Add peanuts and sprouts, etc., if desired. Cook until most of the liquid has been absorbed, tossing frequently.
