This is my take on Moroccan zaalouk. It?s considered a salad and is often served with extra olive oil on top and fresh bread. By American standards this would be more of a dip, or side dish and is also great with baked pita bread, simply as a side, or smeared on top of a burger/sandwich. The flavors are similar however I cut out all the olive oil that is usually fried with the zaalouk to cut on calories. The flavor is still great!

Recipe Ingredients for Zaalouk (Light Version)

302 grams Eggplant
85 grams Tomatoes
5 grams Peppers, Jalapeno
3 cloves Garlic
1 tsp Paprika
1 tsp Cumin
3 dash Pepper, Black

Recipe Directions for Zaalouk (Light Version)

  1. peel, cube (1in.), and boil eggplant in 1t. of salt till tender/soft, drain and discard water.

  2. peel 1-2 tomatoes, deseed and chop or process into very small pieces or puree.

  3. dry fry prepared eggplant, tomatoes, small piece (1in) jalapeno (optional), and 3-4 cloves of garlic while mashing all ingredients to a dip texture. Season with pepper to taste, 1t. paprika, 1t. cumin, and mix well. I choose not to add salt because I used salt when boiling eggplant, also, because I get enough sodium in other meals. Once all ingredients are well blended (be sure to keep stirring to avoid sticking/burning, when dry frying. Also you can spray your nonstick pan with olive oil pam, etc.), serve with 1t. of extra virgin olive oil/serving, drizzled on top.
