A ragu to go over vegetables for lunch

Recipe Ingredients for z_Lunch Ragu

1 tsp olive oil
12 ounces onions, diced
6 ounces carrots, diced
6 ounces celery, diced
4 cloves garlic, minced
8 ounces ground veal
1/4 cup tomato paste
32 ounces tomatoes, chopped
1 tsp thyme
1 Salt and Pepper
1 cup skim milk

Recipe Directions for z_Lunch Ragu

  1. Heat oil over medium in a large pot. Add onions, carrots, celery, and garlic and cook until translucent but not browned (5 minutes).

  2. Add meat and cook until browned. Stir in tomato paste. Add tomatoes, salt, pepper, thyme, and milk. Raise to a simmer, cover, reduce heat, and cook for 30 minutes, until tomatoes are well melted.
