Recipe Ingredients for Yves Vegetarian Chili

2 tbsp Grapeseed Oil
1 cup, chopped Onions
1 large (2-1/4 per lb, approx 3-3/4" long, 3" dia) Peppers, Sweet, Red
1 stalk, medium (7-1/2" - 8" long) Celery
2 cup Organics Red Kidney Beans Dry
4 cup Diced Tomatoes
1 tsp Cumin
3 tsp Red Chili Pepper
3 tsp, ground Basil, Dried
3 tsp Oregano, Ground
1 tsp Chili Powder
350 grams Veggie Ground Round Italian

Recipe Directions for Yves Vegetarian Chili

  1. Soak dried beans in plenty of water overnight. Drain. Bring a large pot of water to a boil. Add beans, boil for 10 minutes, drain. Rinse beans thoroughly, put back in pot with water to cover, bring to a boil, and cook for about 20 minutes.

  2. Meanwhile, heat oil in another large pot. Add onions, peppers, and celery, saute for 3-4 minutes.

  3. Add spices and remaining ingredients, except for beans, tomato paste and ground round. Bring to a boil, reduce heat, and simmer for 1 hour.

  4. Drain beans, rinse well, and add them to the simmering sauce. (I leave in crock pot for about 6 hours).

  5. Add tomato paste and ground round, cook for 15 minutes.
