When you've got veggies that "must go" - here's a good soup to make easily!

Recipe Ingredients for Yummy Veggie Muskgo Soup

32 oz chicken broth (I used Emeril's)
28 oz diced tomatoes with juice
28 oz water
3/4 cup broccoli florets, chopped
3/4 cup cauliflower florets, chopped
3/4 cup broccoli slaw
3/4 cup celery, diced large
1/2 cup red onion, cut in chunks
3/4 cup brussel sprouts - leave whole if not large
3/4 cup carrots
2 tsp kosher salt
1 pepper, oregano, basil to taste

Recipe Directions for Yummy Veggie Muskgo Soup

  1. Put all ingredients in large kettle and cook for at least 2 hours or until veggies are tender. Add salt and other seasonings toward the end of the cooking process.

  2. Soup is good after veggies are tender, but even better if refrigerated overnight so the flavors can marry.

  3. I added a chicken spinach/feta sausage for some protein, and even added 1/4 of a baked potato for a bit more "oomph." It was still pretty low-cal and really tasty!

  4. Also, I took some soup to work the next day but added a touch of rice vinegar and soy sauce - changed the flavor significantly, didn't add too many calories, and was really good.

  5. The soup is a great base to work from - so enjoy and play with it!
