Recipe Ingredients for Yummy Veggie Egg White Fritatta

8 oz broccoli (or other leftover veggies)
1 oz shallots
1 tbsp olive oil
8 egg whites
1 oz parsley, Italian (or other fresh herbs)
2 oz guacamole
1 oz pico de gallo

Recipe Directions for Yummy Veggie Egg White Fritatta

  1. You Need: a non-stick saute pan & a high-temperature spatula

  2. Chop leftover veggies (or meats and veggies - anything really :-))

  3. Saute shallot in olive oil until translucent

  4. Add veggies and increase the heat to dry them out a little

  5. Lightly whisk eggs with a fork, pour on top of the veggies

  6. Stir gently with a high-temp spatula to evenly distribute the veggies and eggs

  7. Turn down the heat to a medium low temperature and cover the the saute pan

  8. Cook until the eggs are fully coagulated (done :-))

  9. If you are adventurous, you can flip the frittata over and lightly cook the other side

  10. Turn out onto a plate and keep covered until you are ready to eat

  11. Cut a piece and top it with the Guacamole and Pico de Gallo

  12. Serve with warmed corn tortillas (avoid flour tortillas if they have partially hydrogenated oils)

  13. Enjoy!
