Yummy Ricotta Pie with a sweet whole wheat crust. Lemony undertones give it a crisp, clean taste. A great dessert with half the calories.

Recipe Ingredients for Yummy Ricotta Pie without the Guilt

3 lbs. fat free ricotta cheese
3 cups egg beaters
1/2 cup splenda
2 tsp vanilla extract
4 cups white whole wheat flour
5 tsp baking powder
1/2 cup honey
1/4 cup splenda
1/2 cup vegetable shortening
1 cup egg beaters, lightly beaten
1 tsp vanilla extract
1 tbsp lemon rind

Recipe Directions for Yummy Ricotta Pie without the Guilt

  1. Beat the 3 cups of egg beaters, 1/2 cup Splenda and vanilla extract. Stir in the ricotta cheese. Set aside.

  2. Preheat oven to 325F. Grease two deep dish pie plates.

  3. Combine the flour, baking powder, 1/4 cup of splenda, and 1/2 cup of honey together. Cut in shortening and mix until mixture resembles coarse crumbs. Mix in 1 cup of egg beaters and 1 tsp vanila extract. Divide dough into 4 balls and chill.

  4. Roll out 2 of the balls to fit into the pie pans. Do not make the crust too thick. Do not flute the edges. Roll out the other 2 balls of dough and cut into 8 narrow strips for the top crust.

  5. Pour the filling evenly into the pie crusts. Top each pie with 8 narrow strips of dough. Brush top of pie with milk for shine. Place foil on the edge of crust.

  6. Bake at 325F for 20 to 30 minutes; then remove foil. Continue to bake another 25 to 30 minutes or until a knife inserted into the center comes out clean.
