No eggs, could be vegan if you use soy milk :), and all maple syrup instead of honey.

Recipe Ingredients for Yummy Pumpkin Muffins

1 tablespoon flaxseed meal
3 tablespoons water
1 cup wholewheat flour
1/2 cup unbleached flour
1/2 cup rolled oats
1 teaspoon cinnamon
2 teaspoons baking powder
165 grams canned pumpkin
1 cup nonfat evaporated milk
1 oz. maple syrup
1 oz. honey
1/4 cup corn oil

Recipe Directions for Yummy Pumpkin Muffins

  1. Preheat oven to 400 degrees

  2. Mix the flaxseed with water

  3. Line a muffin tin with muffin liners :)

  4. Put next five ingredients in a big bowl (the dry stuff)

  5. Put remaining 5 ingredients in a small bowl (the wet stuff)

  6. Mix each bowl on its own

  7. Put the wet into the dry, mix briefly

  8. Distribute equally into the lined muffin tin and bake for around 10 to 12 minutes.

  9. Cool on a rack.
