This works great for vegatarians and meat-eaters alike! The smell reminds me of soup yum yum I like to serve this on english muffins with low fat cheese melted.

Recipe Ingredients for yummy panini topping

2 cups white button mushrooms
1 cup carrots (finely chopped)
1/2 cup onions (finely sliced)
1 medium roma tomatoe
4 tbsp olive oil
1 tsp rosemary
1 tsp thyme
1/8 tsp salt (optional)

Recipe Directions for yummy panini topping

  1. heat oil on a medium skillet

  2. add carrot and let cook for about 30 seconds

  3. add onion stirring occasionally

  4. add mushrooms and let simmer until tender

  5. while the mushrooms simmer dice up the tomatoe

  6. add all seasonings and herbs

  7. add tomatoe
