Flavorful and low-fat Moroccan fish/seafood soup

Recipe Ingredients for Yummy Moroccan fish soup

3 tablespoons olive oil
2 onions, chopped
2 chopped celery stalks
4 cloves garlic, crushed
1 red pepper, seeded and diced
1/2 teaspoon powdered cumin
1 teaspoon cinnamon
1/2 teaspoon coriander seeds
2 large diced potatoes
6 1/2 cups fish stock
3 tablespoons lemon juice
4 lbs. cod
4 ripe diced tomatoes (or 1 small can tomatoes)
1/2 cup dill, parsley and fresh cilantro, chopped
1 salt and pepper

Recipe Directions for Yummy Moroccan fish soup

  1. Heat the oil in a large pot. Add the onion and the celery and cook over low heat; add the garlic and the red pepper when the onion and celery are tender.

  2. Add the cumin, cinnamon and the coriander seeds and stir for one minute.

  3. Add the potatoes and stir for two more minutes.

  4. Add the fish bouillon and the lemon juice. Simmer without cover for 20 minutes; the potatoes should be tender.

  5. Add the fish/seafood, tomatoes, herbs, salt and pepper. Cook until the fish is tender.
