A truly terrific muffin. Changed another version of this recipe I saw from another weight-loss site. Substituted Splenda and molasses for brown sugar; oat bran for bran flakes; all-purpose flour (with Fibersure) for whole wheat; added cocoa to deepen the chocolate flavor; and buttermilk for added moistness. Fibersure, which I actually used in the recipe, is not in Calorie-count's database, so for calculating here I figured in Metamucil (I doubt that Metamucil would work in this recipe). The actual fiber count is 2 grams per serving higher than the 4.1 g shown here. Finally, I tried to omit the word "extract" to get rid of the automatically lower nutritional grade that the software gives it, considering 1/2 teaspoon of vanilla extract as "Contains alcohol." (I don't think it made any difference, though!)

Recipe Ingredients for Yummy, healthy, double chocolate muffins

120 g (1 cup dry) oat bran
1 cup all-purpose flour
1 cup Splenda
1 tablespoon molasses
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
3/4 cup chocolate chips
3 tablespoons ground flax seed
40 g (1/2 cup) cocoa
84 g (4 tablespoons) Fibersure fiber powder
1 egg
1/2 teaspoon vanilla
1/4 cup vegetable oil
1 cup low-fat buttermilk

Recipe Directions for Yummy, healthy, double chocolate muffins

  1. In a large bowl, mix all the dry ingredients together well.

  2. In a separate bowl, mix the wet ingredients together well.

  3. Gently stir the wet ingredients into the dry ingredients just till combined.

  4. Put in muffin tins lined with 18 cupcake liners.

  5. Bake at 375 for 15 minutes.
