A delicious indian/thai curry with fruit toppings.

Recipe Ingredients for Yummy Curry

3 tbsp curry powder
1 tbsp garlic
1 tbsp ginger root, grated
16 oz boneless skinless chicken breasts, cut into thin strips
1 1/2 cups light coconut milk
1 red pepper
2 large carrots, sliced
1 onion, sliced
1 cup broccoli, chopped
1 tbsp cilantro, chopped
1 cup raisins
1 banana, sliced
1/2 cup coconut, shredded

Recipe Directions for Yummy Curry

  1. pan cook chicken, garlic, and ginger in curry in water until mostly done.

  2. Add the milk, vegetables and cilantro and cook until tender.

  3. Serve over rice and top with fruits.
