The lemon juice and cilantro added at the end really brightens this soup and it's perfect year-round! Best when served with a dollup of sour cream and citrus cilantro brown rice. Serves 8, 2 cup servings. Makes 4.5 quarts.

Recipe Ingredients for Yummy Chicken Tortilla Soup

8 cups water
3 chicken breast, boneless, skinless
1/2 tbsp. salt
1 tbsp. olive oil
1 medium onion, diced
4 garlic cloves
1 cup fat-free, reduced sodium chicken broth
1/2 tbsp. cumin
2 tsp. red pepper flakes
1/2 tsp. garlic powder
1/2 tsp. onion powder
1 tsp. paprika
1 tbsp. chili powder
10 oz. diced tomatoes, canned (1 can ro-tel diced tomatoes with cilantro & lime juice)
1 1/2 cups salsa
16 oz. black beans, canned, undrained
10 oz. corn, canned (1 large can shoepeg corn)
1/2 cup cilantro, chopped
1 tsp. lemon zest
2 tbsp. lemon juice

Recipe Directions for Yummy Chicken Tortilla Soup

  1. Bring water to boil in a dutch oven/stock pot, add chicken breasts, boil approximately 10 minutes or until chicken is done. Remove chicken from water and reserve broth in separate bowl.

  2. Meanwhile, dice onion and garlic. When stock pot is empty of water and chicken, add 1 tbsp. olive oil and heat to medium-high. Add onion and garlic and stir frequently until onion is translucent. Be careful not to allow garlic to burn.

  3. Add 6 cups reserved water, 1 cup chicken broth, cumin, red pepper flakes, garlic and onion powder, paprika, and chili pepper. Stir. Add can of ro-tel, 1 can black beans (undrained), 1 1/2 cups salsa, and 1 can shoe-peg corn kernels.

  4. Bring mix to a steady simmer. Meanwhile, shred chicken then add to pot. Stir occasionally keeping just under a boil for 15 minutes.

  5. Zest one medium-sized lemon then juice lemon for 4 tbsp. of liquid and chop cilantro. Remove soup from heat then add lemon zest, lemon juice, and cilantro.
