A vegan carrot cake recipe which I tweaked a bit.

Recipe Ingredients for Yummy Carrot Cupcakes

1 cup whole wheat flour
1/4 cup flax meal
1/4 cup bran
1/4 cup brown sugar
1 tsp. baking powder
2 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. ginger
1/2 tsp. nutmeg
1 pinch salt
1 cup finely grated carrot
3/4 cup water
1/4 cup molasses
2 tbs. olive oil
1 tbs. vanilla extract

Recipe Directions for Yummy Carrot Cupcakes

  1. Mix dry ingredients and carrot in a large bowl.

  2. Add wet ingredients.

  3. Beat until smooth.

  4. Pour into a cupcake pan which has been greased or lined with cupcake papers.

  5. Bake in oven preheated to 350 F for 15-20 minutes, or until toothpick inserted in center comes out clean.
