Norwegian Christmas bread handed down to Rita Thoreson Purcell from Olga Thoreson, but wrestled from her by Rita's dad, Albert Maurer much to her disgust.

Recipe Ingredients for Yule Kake

2 eggs
2 cups 1% Milk
3 pkgs yeast
1 cup butter or margarine
2 tsp salt
1 1/2 cups sugar
1 tsp lemon extract
2 tsp cardamom, pulverizd
8 cups flour
2 cups raisins
3 cups candied fruit

Recipe Directions for Yule Kake

  1. separate and beat eggs

  2. scald milk and cool to luke warm, melt butter in milk while it cools and add all except 1/4 cup of sugar, add lemon extract, salt and cardamom.

  3. disolve yeast in 3/4 C water with 1/4 cup of sugar, let rest until a foam appears.

  4. Mix in eggs and milk mixture

  5. Add flour 1-2 cups at a time.

  6. Add fruit

  7. Knead until smooth

  8. let rise til double, at least an hour or more

  9. knead down and make into 4 large and 2 small loaves

  10. let rise again til double and bake 45 minutes at 350

  11. check at 30-35 minutes,

  12. Can make into round loaves or braids.
