Recipe Ingredients for Yukon Gold Mashed Potatoes

1 1/2 lb Yukon Gold or white potatoes, quartered
1 salt and pepper
1 1/2 cups fat free sour cream

Recipe Directions for Yukon Gold Mashed Potatoes

  1. Place the potatoes in a pot, add enough cold water to cover and bring to a boil. Add 1 tsp salt, reduce heat and simmer until just tender, 15 to 18 minutes. Drain the potatoes and return them to the pot.

  2. Add the sour cream, 1/2 tsp salt and 1/4 tsp pepper and mash to desired consistency.
