This is modified from a Better Homes and Gardens Phase 2 Low Carb cookbook. It's bright, chickeny and filling.

Recipe Ingredients for Yucatan chicken soup

228 g boneless, skinless chicken breasts (fillet), chopped into bite-sized pieces
232 g boneless, skinless chicken thighs (thigh+fillet), chopped into bite-sized pieces
2 cups chicken stock
5 green onions, chopped
1 tomato, chopped
3 cups turnip greens
3 cloves garlic, minced
1/2 tsp cumin
1/2 tsp red pepper
1/2 tsp red pepper flake
3 tbsp lime juice

Recipe Directions for Yucatan chicken soup

  1. Saute chicken with garlic until chicken is no longer pink. Add spices, onion, greens and chicken stock.

  2. Boil for 10 minutes.

  3. Add tomatoes and lime juice in last 2 minutes.
