Recipe Ingredients for Your Basic Chocolate Cupcake

1 cup soy milk
1 teaspoon apple cider vinegar
3/4 cup granulated sugar
1/3 cup canola oil
1 teaspoon vanilla extract
1/2 teaspoon almond extract
1 cup all-purpose flour
1/3 cup unsweetened cocoa powder
3/4 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt

Recipe Directions for Your Basic Chocolate Cupcake

  1. Preheat oven to 350 degrees. Line muffin tin with foil liners.

  2. Whisk soy milk and vinegar in big bowl. Set aside for a few minutes to curdle.

  3. Add sugar, oil and vanilla and beat until foamy.

  4. In separate bowl, sift together remaining ingredients.

  5. Add in two batches to wet ingredients and beat until no large lumps remain.

  6. Pour into liners. Bake 18-20 minutes or until toothpick comes out clean.

  7. Transfer to wire rack and cool completely.
