Recipe Ingredients for Yorkshire Pudding

2 eggs
2/3 c low fat milk
1/3 c plain flour
3 T olive oil

Recipe Directions for Yorkshire Pudding

Heat oven to 450F with empty 12 muffin tray in oven heating up. Add eggs, milk and plain flour to a container in equal volume quantities (measures given are rough guide). Mix. Once oven is heated add small amount of olive oil to each cup - sufficient to coat each cup. Put back in oven for 5 mins. Add pudding mix to tray and cook for 10/15mins until risen and golden brown.
