Recipe Ingredients for Yogurt and Spinach Dip

1 cup frozen chopped spinach
2 onions, peeled and thinly sliced
2 cloves garlic, peeled and crushed
4 tbsp extra virgin olive oil
1 1/2 cups yogurt, drained in cheesecloth for 3 hours
1/4 tsp salt
1/4 tsp freshly ground black pepper
1/4 tsp saffron, dissolved in 1tbsp hot water

Recipe Directions for Yogurt and Spinach Dip

  1. Place the spinach in a pan, cover, and steam until wilted, about 5 minutes. Drain and squeeze out excess moisture with a paper towel.

  2. Lightly brown garlic and onions over medium heat. Stir in the spinach and cook for 2 minutes. Remove from heat and let cool.

  3. Mix together the yogurt and the spinach mixture and season with salt and pepper. Refrigerate several hours before serving. Transfer to a serving bowl and garnish with saffron water.
