Easy to make Turkish soup recipe for a warming meal on a winter evening :) Topped with a tomato sauce spiced with mint. Recipe can be easily doubled.

Recipe Ingredients for Yogurt Soup

1/4 cup dried rice
1 egg
1 tbs flour
3/4 cup yogurt
1/2 tsp salt
2 cups water
1 tbs butter
1 tbs tomato paste
2 tbs mint, add more to taste

Recipe Directions for Yogurt Soup

  1. Cook the rice.

  2. In a bowl add the egg, yogurt and flour. Mix until smooth.

  3. Add the mixture to the cooked rice with 2 cups of water and salt.

  4. Stir consistently on low heat until it lightly bowls. This will make the soup creamy. Do not overheat or the soup will be stiff.

  5. Add dried, crushed mint.

  6. To make the sauce: In a seperate pan melt the butter with the tomato paste and add a tsp or two of mint.

  7. Pour the soup into bowls and top with a swirl of the tomato sauce.
