I got this recipe from Kath at Katheats.com. Its really light and delicious!

Recipe Ingredients for Yogurt Pancakes

1 cup All Purpose Enriched Flour
5.3 oz Nonfat
0.33 cup Milk, Nonfat, Fluid
1 large egg Eggland's Best Egg
1 tsp Sugars, Granulated
1 tsp Vanilla Extract
1 tbsp Vegetable Oil, Canola
0.5 serving Baking Powder

Recipe Directions for Yogurt Pancakes

Beat egg in a large mixing bowl. Then combine all other ingredients and blend well. Cook on a non-stick skillet. When bubbles appear on one side, flip pancake. Should yield around 10 pancakes. I topped mine with ghiradelli dark chocolate chips and a little honey. So good!
