1 eggplant
1/3 cup bread crumbs
5 ounces plain nonfat yogurt

Recipe Directions for Yogurt Coated Eggplant

  1. Preheat oven to 350 degrees.

  2. Slice eggplant into 1/2 inch rounds.

  3. Coat both sides with yogurt.

  4. Dip each side in bread crumbs.

  5. Place on foil baking sheet.

  6. Bake for 20 minutes; turn slices, bake another 20-25 minutes, until golden brown.
