I faound this recipe on my Balkan yogurt container. it is now a staple in my house. It's easy to make, it's good, low cal. and it reheats well in the micro-wave. You can put any vegetables or none to taste instead of the mushrooms.

Recipe Ingredients for Yogurt cheese and mushroom Omelet

1 tsp. Canola oil
1 cup mushrooms (or any other veget.)
6 eggs
1 cup yogurt (Balkan or Greek)
1 salt, pepper
1/4 cup cheddar, shredded
1 tbsp. Parmesan, shredded

Recipe Directions for Yogurt cheese and mushroom Omelet

  1. Preheat oven to 350F.

  2. Spray with Pam a 2 L. oven proof dish.

  3. Stir fry mushrooms, or other veget. in Canola oil.

  4. Put at the bottom of the dish.

  5. Mix together the yogurt, the eggs, salt and pepper and cheddar, pour over mushrooms.

  6. Sprinkle Parmesan on top.

  7. Bake in 350 oven for 35-40 minutes till middle is cooked.
