Yogurt Blueberry Muffins Recipe

Replaces a lot of the fat with yogurt.

Recipe Ingredients for yogurt blueberry muffins

2 cups all-purpose flour
1/2 cup sugar
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1/4 cup orange juice
2 tablespoons vegetable oil
1 teaspoon vanilla extract
1 cup low-fat yogurt
1 large egg, lightly beaten
1 cup fresh or frozen blueberries, thawed

Recipe Directions for yogurt blueberry muffins

  1. Preheat oven to 400.

  2. Combine first 5 ingredients in a large bowl; stir well, and make a well in center of mixture.

  3. Combine orange juice and next 4 ingredients in a bowl; stir well.

  4. Add to flour mixture, stirring just until moist.

  5. Gently fold in blueberries.

  6. Divide batter evenly among 12 muffin cups coated with cooking spray.

  7. Bake at 400 for 18 minutes or until golden.

  8. Remove from pans immediately; let cool on a wire rack.
