Red pasta sauce with minced aromatics (onion, garlic, celery, carrot) that can be brought together in the time it takes to boil water and cook your pasta.

Recipe Ingredients for Yiscah's Red Sauce

2 tbsp olive oil
1 clove garlic, minced
1/2 cup minced onion
1 carrot, chopped
1 celery stalk, chopped
848 g (one 28-oz. can) whole tomatoes
1 can (5 oz.) tomato paste
1/2 cup dry white wine
1 tsp chopped basil
1/2 tsp tarragon
1/2 tsp rosemary
1/2 tsp oregano

Recipe Directions for Yiscah's Red Sauce

  1. Heat olive oil in medium saute pan over medium-high heat, careful not to let it smoke. Add garlic, onion, carrot, and celery, and cook until veggies soften - perhaps 5 or 10 minutes.

  2. Crush tomatoes with fork or squeeze in hand and add to pan. Cook a few minutes more or until tomatoes "break down" and become saucy.

  3. Add wine and let it bubble and reduce for a couple minutes.

  4. Reduce heat and add herbs. Simmer for several minutes or until your pasta is almost done.

  5. Add canned tomato paste or sauce to achieve desired consistency. Can run sauce through blender to make smooth, or keep chunkier. Easy to vary based upon pasta shape and preferences.
