Baked beans and tomato casserole (Greek)

Recipe Ingredients for Yigantes plaki

2 cloves garlic
1 pound Beans Large Lima
2 medium onions
1/3 cup Extra Virgin Olive Oil
16 oz canned chopped tomatoes
2 Bouillon Cubes
1/8 tsp sea salt
1/4 tsp pepper
2 tbsp fresh parsley
1 1/2 cup water

Recipe Directions for Yigantes plaki

  1. soak beans for 12 hours the night before and drain in the morning

  2. put the beans into a pot, cover with cold water, bring to a boil and cook at slow for 1 hour. Drain and set aside.

  3. Preheat oven to 325F

  4. Using a wooden spoon, saute the onion and garlice in the olive oil until soft. Add tomatoes, cubes, salt, pepper, parsley and water, and boil gently for 10-30 min until sauce begins to thicken

  5. Place beans in an oven-proof pan, add tomato sauce, stir and spread mixture out evenly.

  6. Bake for 1 - 2 hours or until beans are soft. Check during cooking, and if needed, add small amount of boiling water. The dish will look crispy on top.

  7. Remove from the oven, cover, and allow to cool before serving. (warm or cool)
