8 medium Squash, Summer, Zucchini, Includes Skin
5 medium Organic Russet Potato
32 oz Whole Peeled Tomatoes
1.5 medium Yellow Onions
10 tablespoon Italian Parsley
6 tbsp Olive Oil, Extra Virgin
1.3 oz Cheese

Recipe Directions for Yiagni with Feta, serves 8

Saute onion in oil, add zucchini and potato both sliced thick, and parsley and cover, stirring every ten minutes and cook over medium/low heat until tender. Add tomatoes and simmer for 45min-1 hour. Serve with feta.
