A tasty and easy way to make yellow squash.

Recipe Ingredients for Yellow Squash and Tomato Bake

4 cups yellow squash, sliced
28 oz can diced tomatoes
1 cups low-fat milk
3/4 cup parmesan cheese
3 tbsp cornstarch
1 tsp salt
1/2 tsp pepper

Recipe Directions for Yellow Squash and Tomato Bake

  1. Preheat oven to 400 degrees

  2. Spray a 9x13 pan with cooking spray

  3. Layer pan with 2 cups of yellow squash

  4. Pour half of the tomatoes on top

  5. Repeat with a second layer of squash and tomatoes

  6. In medium sized pot, pour milk, a 1/2 cup of parmesan and cornstarch and stir together

  7. Simmer over medium high heat for until the milk thickens.

  8. Pour over squash and tomatoes

  9. Top with remaining 1/4 cup of parmesan cheese

  10. Bake for 25-30 minutes, until bubbly.
