This is a bright yellow soup of pureed vegetables. The cheese adds a saltiness and a bit of creaminess. You don't need to peel the zucchini for flavor, but doing so preserves the yellow color of the rest of the soup.

Recipe Ingredients for Yellow Squash Soup

4 medium yellow squash
4 medium carrots
1 zucchini
1 cup yam
1/2 onion
3/4 cup cheddar cheese
2 cups chicken broth
1 tablespoon vegetable oil

Recipe Directions for Yellow Squash Soup

  1. Dice the yellow squash into bite-sized pieces. Peel and dice the carrots, yam, and zucchini.

  2. Heat the oil in a large pot and saute the onions until soft.

  3. Add the other vegetables, broth, and enough water to cover the mixture.

  4. Bring to a boil and simmer 25 minutes until vegetables are soft.

  5. Remove from heat and allow to cool until the mixture can be safely homogenized in a blender.

  6. Return to pot and add cheese, heating until the cheese is dissolved.
